Japanese Chicken Salad

Todd & I made this quick & easy salad for dinner the other night. He had this recipe from his mom and actually made a huge batch of it last year for Lynn's wedding shower (isn't he the greatest guy?) It was a huge hit & everyone loved it! In fact, many of Lynn's relatives and our friend's moms were telling me that Todd was a keeper, despite they had never met him, just because this salad was so good.
