BBQ Chicken Pizza

One of my favorite flavors of pizza is BBQ Chicken so Todd & I decided to make it for dinner last night. It is super easy, especially if you cheat and don't make your own crust like we did, and is very yummy!

Ingredients:
1/2 cup barbecue sauce
Small red onion, sliced
1 chicken breast, grilled & cubed
1/2 cup 4 Cheese Mexican shredded cheese
1 pizza crust, store bought or homemade

Directions:
While grilling chicken, top the pizza crust with bbq sauce & cheese and slice the onion. Cube the grilled chicken and add to the pizza along with the red onion. You can also add more cheese on top if you like. Bake in the oven at 450 degrees for 8-10 minute. Enjoy!

We thought the pizza was very good but a few things we would do different the next time: steam/cook the red onions before putting them on the pizza because 8-10 minutes in the oven was not enough time to soften them, make our own crust, and add a little bit more bbq sauce.

I <3 BBQ Chicken Pizza and here are my suggestions for making yours tastier next time:

1. Make your own bbq sauce. It's SUPER easy and you will absolutely love this recipe, it's incredible:

2. Carmelize or saute the red onions. Slice the onion in half moons, saute for about 8-10 minutes on medium high using 1T of EVOO and some S&P till the edges are golden brown.
