Making Beer & Grilling Out

On Friday night, Todd stayed in and made a batch of beer. We haven't made any since January, partly because Todd moved in the spring and we didn't want to deal with moving bottles of beer and partly because we were waiting for his wort chiller to be delivered. This was our 4th batch of beer we've made and we chose to make a hefeweizen. It'll still be another month or so until it's drinkable but I think this one is going to turn out great!

Todd's newest brewing contraption

On Sunday, Todd & I made dinner for my parents. We invited them over to Todd's apartment because he has a grill and also a balcony, which means more space than my apartment. Todd & I spent most on Sunday cooking & cleaning but the dinner was a success and well worth the time spent.

Fresh pineapple, tomatoes, and zucchini for grilling

Our main dish were pesto chicken & veggie foil packets. They're very easy to make; all you have to do is wrap up half a chicken breast, zucchini, tomatoes, basil pesto sauce, Parmesan cheese, and a little bit of salt & pepper in foil and throw it on the grill for 25-30 minutes.

All the ingredients for the foil packets

Wrapped up & ready to be grilled
Add a little mozzarella cheese & it's ready to eat
We also had fresh corn salad on the side as well as grilled pineapple
And we made white sangria

Strawberry fudge pie for dessert
Recipes for the corn salad & pie to follow this week!
