Chicken Salad

Instead of buying sandwiches or making turkey sandwiches, Todd & I decided to make homemade chicken salad sandwiches to take on our picnic on Memorial Day. I love chicken salad but had never made my own. Once we chopped the ingredients and cooked the chicken, we put all the ingredients in a food processor, except the mayo, and it was ready to eat! My favorite part of the chicken salad were the bits of almonds to add crunch and pieces of pineapple to add some sweetness.

Ingredients:

3 large chicken breasts, cooked & chopped
1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup almonds, sliced or slivered
1/4 cup crushed pineapple, drained
1/4 cup sweet pickles, cubed
1/4 cup celery, chopped
1 cup mayonnaise, or to your liking
Salt & pepper to taste

Directions:

1. Combine all ingredients except mayonnaise in a bowl and mix well.
2. Add the mayonnaise and mix to coat.
3. Chill, covered, until serving time. Refrigerate any leftovers.


Serves 6
