Cookie Cake Pie

I was in charge of bringing dessert this month to book club and with it being our 1 year anniversary of starting our book club, I knew it had to be something outstanding.  The problem in deciding what to make though was two-fold: 1.) There are too many recipes to choose from on Pinterest and 2.) I'm indecisive.  When I found a recipe for Cookie Cake Pie, I knew it was perfect because it covered 3 different desserts in one and I didn't have to choose between them.  I also knew it would be easy enough for me to whip up after work before I had to go to book club.

You can actually make each layer from scratch (cookie, cake, and frosting), but to save time I used refrigerated cookie dough, a box of cake mix, and a container of icing.  See the link below for the full recipe.  I stuck to using basic chocolate chip cookie dough and funfetti cake but the great thing about this recipe is you can make different versions every time.  In fact, next time, I might use peanut butter cookie dough and chocolate cake.
Cookie Cake Pie

The ingredients

Pie crust with cookie dough on top

Cake batter poured on top

Fresh out of the oven...although next time I won't use all the cake mix as it was overflowing from the pie crust once it baked and it took close to an hour for the cake to be completely cooked

Iced (with sprinkles!) and ready to devour
