Guacamole, Pineapple Chiller, Couches, and Hot Tubs

Todd and I have had a busy weekend so far and it's only Sunday morning.

Like I mentioned earlier, Friday night we went to Cantina Laredo with 3 of my friends and their significant others. After a tough end to the week for me, it was nice to finally see some of my best friends and forget about other things, like my leg hurting and the Boston Marathon.

We all started out with the homemade guacamole, which was good, but I think mine that I make is a little bit better.

Todd got the Oaxaca Camarones Con Tocino, which was shrimp filled with oaxaca cheese, jalapeƱo, and wrapped in smoked bacon.

Since I had already eaten my weight in tortilla chips & guac and heard the dessert here was really good, I got the Cilantro Chicken Salad. It had fajita chicken, black beans, red peppers, avocado, montery jack cheese and cilantro lime dressing but I substituted for honey mustard instead. The salad bowl was pretty cool too because it wasn't flat on the table but leaned over a little bit as you can see in the pic.

I shared the chocolate cake with 3 other people and it was delicious! I loved the chocolate crunchy coating on the ice cream.

Todd also brought over a surprise present for me on Friday night. He got me a headlamp to wear when it's dark outside in the morning for running because there are very few street lights by my apartment. It'll be perfect for Hood to Coast in August too. Unfortunately, I won't be able to use it for awhile but more on that next week....

Saturday, Todd & I both worked out in the morning and then ran a bunch of errands. We stopped at Sonic because Todd was thirsty and he ended up getting a Pineapple Limeade Chiller which was amazing! It's made with their limeade and vanilla soft serve but also had chunks of pineapple in it.


While Todd was sipping on this, we went couch shopping for Todd and his new apartment. He's moving at the end of the month and doesn't have really have any furniture to sit on except his papasan chair. We went to 3 stores and looked at couches for over 2 hours. He's leaning towards leather and of course the big thing is how they feel so we had to sit and lay down on all of them.

After hours of couch shopping, we went and saw Hot Tub Time Machine at the movies. I didn't really have any expectations going into it so I didn't think it was too bad. It definitely wasn't the funniest movie I'd ever seen but it had some funny parts. I'd probably wait until it came out on DVD though to see it and not waste the money going to the theater.

definitely a very busy weekend for you! glad you were able to have fun and take your mind off of boston and soreness and all that stuff :)

and that chocolate cake looks good -- and i'm not even a cake person!
