I've really been slacking on trying out new recipes the past few months but I wanted something a little lighter to make the other night for dinner since it was almost 90 degrees out. This pasta recipe fit the bill and was as tasty as it looks.
Marinated Tomato & Mozzarella Pasta (found on Pinterest)
The ingredients
Grape tomatoes, mozzarella balls, and fresh basil
After the pasta was added
Marinated Tomato & Mozzarella Pasta
Ingredients:
1 lb grape or cherry tomatoes, halved
4 oz bocconcini (about 12 small mozzarella balls), halved
1/2 c torn fresh basil
1/4 c red wine vinegar
1½ Tbsp extra virgin olive oil
1/2 lb rigatoni, preferably whole wheat
1 c shredded cooked chicken breast (optional)
Directions:
1. Mix together tomatoes, mozzarella balls, basil, vinegar, and oil in serving bowl. Let stand 10 minutes.
2. Cook pasta per package directions while tomatoes stand. Drain. Add hot pasta and chicken to tomato mixture, stirring to coat well. Season with salt and pepper to taste. Top with fresh basil leaves, if desired.

That looks delicious! J doesn't eat veggies so dinners become challenging in the summer.
