Peanut Butter Cheese Ball (and Tailgating!)

Todd and a few of his friends had their annual tailgate on Saturday for the Ohio State vs. Wisconsin football game. These guys truly go all out for their tailgate and make it an all day affair; in fact, Todd was up at 3:30 AM to meet the other guys so they could be at their tailgating spot by 5:00 AM. The game wasn't even until 8:00 PM! Todd also likes to try to make something different for the "main course" every year--he's done chili, meatball subs, Italian sausage, and this year he was doing pulled pork sandwiches. I wanted to help out so I spent Friday night making several side dishes and desserts, including Taco Dip and Buckeye Bars.

I knew I wanted to try a few new desserts and when I saw this Peanut Butter Cheese Ball on Life After I Dew last month that she found on Pinterest, I made sure to pin it myself to save for Todd's tailgate.




My Peanut Butter Cheese Ball

Peanut Butter Cheese Ball

Ingredients:

1 package (8 ounces) cream cheese, at room temperature
1 cup powdered sugar
3/4 cup creamy peanut butter (not all-natural)
3 tablespoons packed brown sugar
3/4 cup milk chocolate chips
3/4 cup peanut butter chips
Graham cracker sticks, teddy grahams, and/or apple slices for dipping

Directions:

1. Beat cream cheese, powdered sugar, peanut butter and brown sugar in large mixer bowl until blended.
2. Spoon onto a large piece of plastic wrap; bring up all four corners and twist tightly forming into a ball shape.
3. Freeze for 1 hour 30 minutes or until firm enough to keep its shape. Place peanut butter and chocolate chips in flat dish. Remove plastic wrap from ball and roll ball into morsels to completely cover, pressing morsels into the ball if necessary.
4. Place ball on serving dish; cover and freeze for 2 hours or until almost firm. (Can be made ahead. If frozen overnight, thaw at room temperature for 20 to 30 minutes before serving.)
5. Serve with graham cracker sticks, teddy grahams, or apple slices for dipping or spreading.

Some of my friends that came to the tailgate...it was cold so we were all bundled up!

Peanut butter cheese ball sounds great! I might have to try that, although I have never made a cheese ball before!
